Viognier & Vermento (50/50) picked early for natural acidity, destemmed and crushed then left on skins for a few hours to extract texture and flavour before pressing. Juice was settled over night with no additives, then cloudy juice was racked to tank and neutral barrels for natural fermentation. The wine was left on gross lees for twelve months for complexity and texture before blending to tank to rest.

Bright lifted nose –preserved lemon, vanilla panacotta and barley sugar. Lemon tart palate with a slippery middle and slightly grippy edges. Finishes with a sea spray/oyster shell saltiness. Delicious. Take it to the park. Start a riot.
